Expat Living – Adapt to a new culture with a local soul food

How to adapt to a new culture? Getting to know local food can be the best way to fit into a new culture. If you are Expats in Asia or interested in Asian culture, you may want to learn how to make one of the Asian soul food. When I was a kid, my mum prepared this soup for my family and it is one of my favorite soup as it is so delicious and nutritious. Fish and tofu soup is a traditional Chinese recipe in households. In Fish and Tofu soup, fish contains high collagen, protein, the heart- healthy omega-3 fatty acid, phosphorus and a wide range of minerals; Tofu contains no cholesterol and is an excellent source of iron and calcium. The following is the recipe for Fish and Tofu soup, you can try it at home when you don’t want to dine out during COVID. 

Ingredients: 

  • 400g soft tofu, sliced 
  • 600g Golden Threadfin Bream, Fish 
  • A few green onions 
  • A few slices of fresh ginger
  • One teaspoon of salt
  • One teaspoon of white paper
  • 1L of water

Steps: 

1, Start by washing and pat dry all the fish, marinating it by rubbing one teaspoon of salt and white paper onto the surface and letting it sit for 10 minutes. 

2, Heat the wok with oil, fry the fish on high heat, and add a few slices of fresh ginger until all fish is crispy brown. Next, pour 1L water into the wok and continue to cook for 5 minutes. 

3, Add the white part of the green onion, and then you can use a spoon to scoop the foam; reduce heat to medium and simmer for 15 minutes. 

4,Use a strainer to filter fish bones and transfer the soup into a new pot. Add the tofu, green onion, and a little salt into the soup, and simmer for three more minutes, then serve.
